Effects of salinity on biochemical systems

Leads to the death of microorganisms by dehydration: the change in osmotic pressure at higher salt concentrations is the main cause.

The interior of a bacterium is a semi-enclosed environment that must exchange substances and energy in its favor with the external environment in order to maintain its vital activity, but it must also prevent the entry of the vast majority of external substances in order to avoid interfering with and obstructing its internal biochemical reactions.

Salt concentration increases, resulting in the internal solution concentration of bacteria lower than the outside world, and because of the characteristics of water from low concentration to high concentration movement, resulting in a large loss of water in the bacterial body caused by the internal biochemical reaction environment changes, and ultimately undermine the process of its biochemical reactions until the interruption of the bacterial body death.

Microorganisms die when the absorption process is interfered or blocked: the cell membrane has the characteristic of selective permeability to filter the substances that are harmful to the bacterial life activity and absorb the substances that are beneficial to its life activity.

The absorption process is directly affected by the concentration of the solution in the external environment, the purity of the substance, etc. The addition of salt causes the bacterial absorption environment to be interfered with or blocked, which ultimately leads to the inhibition of the bacterial life activity or even death.

Toxicity and death of microorganisms: Some salts will enter into the bacteria with their life activities, destroying their internal biochemical reaction process, and some of them will interact with the cell membrane of the bacteria, resulting in the change of their properties and no longer play a protective role or no longer absorb certain substances beneficial to the bacteria, which will lead to the inhibition of bacterial activity or the death of the organisms.
