After pasteurization, the cooling of mayonnaise is to maintain its texture, prevent spoilage, and ensure food safety. Preservation of sauce quality to desired texture, food safety, extended shelf life, along with operational efficiency are advantages of a cooling system to overall productivity and product safety.
